Cold Larder Chef

Simberi Gold Company Limited forms part of the St Barbara Group. Our Simberi Operations consists of an open cut mine on the northernmost island in the Tabar group of islands in the province of New Ireland in Papua New Guinea. We are currently seeking a Cold Larder Chef to join our team. This is a permanent full-time position at our Simberi Operation. Your work location is Papua New Guinea, working a 15/13 Roster from Kavieng/Rabaul/Port Moresby/Lae/Mt Hagen/Buka/Madang/Goroka/Alotau/Wapenamanda/Popondetta/ Hoskins or Tabar group of Islands. (Locals are encouraged to apply).

Reporting to the Head Chef.

The main purpose of this position is to be responsible for the serving of all 'cold' food’ during a service and the setting up of plates for the other chefs' outgoing food. The plates must be correctly garnished with salads, lemons, cheeses, sauces etc.

Key Responsibilities Include

  • Prepare salads, sandwiches and other cold food for cooking and meal consumption.
  • Prepare any "cold" dishes that either stand alone or require further work by other chefs.
  • Work with other chefs to create and maintain the menus and take the knowledge of the menu and translate it into food stuff orders.
  • Have the understanding on how cold dishes complement other dishes or how other chefs will use cold food stuffs from the larder.
  • Store the food within the larder according to safety and sanitation guidelines or instruct other staff members how to do so.
  • Track larder inventory daily with inventory sheets and orders food stuffs whenever they are low.
  • Ensure the food selection includes healthy choices.
  • Cleaning of equipment, utensils, and kitchen area as necessary
  • Ensure all waste is managed and disposed of in an appropriate manner.
  • Direction of Kitchen Hands where necessary.
  • Carry out other tasks as required.
  • Pay attention to the incumbent in charge of the Catering & Servicing department and safety and working standards, including the correct operation of all facilities including kitchen utensils and machines.
  • Record and report any undesired events, unsafe practices or near misses to the Camp Superintendent.
  • Comply with established OH&S policies and practices.
  • Take responsibility for reporting of incidents, including any injury or near miss to the OH&S Department and Safety Committee in a timely manner.
  • Regularly communicate with subordinates regarding new OH&S initiatives and OH&S statistics.
  • Comply with established environmentally sustainable measures so as to not adversely impact on the natural fauna, flora, freshwater resources and marine life within the bounds of Simberi Island.

Scheduling accountabilities

  • Identify training requirements of subordinates through consultation with the employees and the Simberi Gold Company Training Department.
  • Using established training methods and in conjunction with the Training Department train subordinates to achieve competency in the area identified and within the scope of their position.
  • Participate in training provided by the business.

People accountabilities

  • Ensuring own work performance meets all role requirements; and taking appropriate actions to develop in current role and for future roles.

Essential

  • Behaviour consistent with St Barbara’s Values
  • Qualified Cold Larder Chef or catering/hospitality qualification. Certificate 2 in Hospitality and Commercial Cookery Roles
  • Three (3) years’ experience in a similar role.
  • Ability to train local employees in the role.
  • Well-developed communications, presentation, and interpersonal skills.
  • Well developed “team oriented” approach to the achievement of outcomes.
  • Best workmanship and dedication to complete tasks.
  • Physically fit and healthy.
  • Prepared to work out of hours as required.
  • The ability to work shift work and respond to calls.
  • Ability to work within a team environment.

Desirable

  • Ability to multi-task.
  • Excellent time management skills.
  • Strong oral, written and visual communication skills.
  • Two years supervisory experience
