Summary

Own the Western kitchen: menu, consistency, team growth, and cost control.

Duties and Responsibilities

  • Menu & specials; recipe/portion standards; plating guides.
  • Lead grill/oven/sauce stations; run the pass.
  • Prep plans, stock counts, ordering; track wastage.
  • Hygiene and safety logs; audit readiness.

Job Requirements

  • 7+ years in Western kitchens; 2+ years as Head/Sous Chef.
  • Mastery of grilling, roasting, sauces, and pasta.
  • Costing skills and team leadership.

Others

  • Hours & Overtime as per PNG law.
  • Strict food safety and H&S compliance.
  • Training/succession of PNG staff; records maintained.
  • Reports to: Restaurant Manager.
