Summary

Lead daily FOH operations, people, and finances to deliver consistent service and profit.

Duties and Responsibilities

  • Lead floor service; resolve guest issues and complaints.
  • Roster, hire, train, and discipline FOH staff.
  • Cash-up, daily sales report, void/refund control, bank drop.
  • Stock counts, supplier POs, GRNs, wastage log; price updates with chefs.
  • Compliance: food safety logs, H&S, incident register, time & wages records.
  • P&L focus: food cost, labour %, promo ROI; weekly KPIs.

Job Requirements

  • 5+ years FOH leadership; POS and Excel proficient.
  • Strong communication; calm under pressure.
  • Numerate and organized; attention to detail.

Others

  • Follow Hours & Overtime according to PNG law
  • Food safety: maintain HACCP/temperature logs, cleaning schedules, pest control.
