Summary

Support the Head Chef; lead stations and ensure consistency.

Duties and Responsibilities

  • Lead grill/sauté/pantry; check prep and plating.
  • Coach juniors; monitor portions and waste.
  • Assist stock counts, ordering, and cleaning checks.
  • Ensure food preparation according to recipe and presentation standards.

Job Requirements

  • 3–5 years in Western kitchens; proven line leadership.
  • Strong station skills; reliable under pressure.
  • Basic costing and ordering.

Others

  • Hours & Overtime as per PNG law.
  • Food safety and H&S compliance.
  • Reports to: Head Chef — Western; covers when Head is off.
