Are you a commercially minded Food & Beverage leader with strong culinary foundations and a passion for delivering exceptional guest experiences?

Crowne Plaza Residences Port Moresby is seeking an experienced Head of Food & Beverage to lead our entire Food & Beverage operation, including restaurant and bar service, culinary production, conferences and events, private functions, catering, and stewarding. This role reports directly to the General Manager and plays a key part in driving guest satisfaction, team performance, operational excellence, and financial results

A little taste of your day-to-day

Every day is different, but your responsibilities will typically include:

• Leading the entire Food & Beverage operation, including Restaurant & Bar, Conferences & Events, Catering, Culinary Production, and Stewarding.
• Providing visible leadership across restaurant services, functions, conferences, and major hotel events to ensure exceptional guest experiences.
• Partnering closely with the Head Chef to maintain food quality, menu development, kitchen standards, and food safety compliance.
• Driving departmental revenue, profitability, forecasting, budgeting, and commercial performance across all F&B outlets and revenue streams.
• Managing guest feedback, service recovery, and client relationships to enhance guest satisfaction and encourage repeat business.
• Working alongside Sales & Marketing to maximise restaurant promotions, catering opportunities, conference business, and event conversion.
• Ensuring effective inventory management, purchasing controls, stock accuracy, labour productivity, and cost management.
• Leading, coaching, and developing department managers and team members while fostering a culture of accountability, engagement, and excellence.
• Maintaining compliance with HACCP, food safety standards, workplace safety requirements, and operational audit standards.
• Sound knowledge of food safety, HACCP, and hospitality compliance requirements.
• Relevant hospitality or culinary qualifications will be highly regarded.

What we need from you

• Significant Food & Beverage leadership experience within hotels, resorts, restaurants, banqueting, or multi-outlet hospitality operations.
• A strong practical culinary background with the ability to mentor and guide kitchen leaders.
• Sound understanding of budgets, forecasting, menu engineering, labour productivity, and inventory control.
• Proven ability to lead large teams and deliver results through others.
• Excellent communication and stakeholder-management skills.
• Strong commercial awareness and a passion for guest satisfaction.
• HACCP knowledge and a relevant culinary or hospitality qualification, or equivalent experience.
• Flexibility to support early mornings, evenings, weekends, and major-event operations
• Relevant hospitality or culinary qualifications will be highly regarded.
